Pan-Seared Chicken

1. In a small bowl, combine the seasonings. Pat the chicken dry. Coat the chicken with 1 tbsp of Olive Oil, then rub the seasoning mixture into the chicken on both sides.
2. Pour the rest of the olive oil into a pan and heat over medium-high heat until the oil is shimmering. Add the chicken and cook for 5 minutes, then reduce the heat to medium and flip the chicken.
3. Cook the chicken for an additional 2-5 minutes. The cook time will depend on the thickness, so use a meat thermometer to make sure the chicken has reached 165 degrees fahrenheit.
4. Remove the skillet from heat. Place the butter in the pan and allow it to melt and coat the chicken. You can also spoon the melted butter over the chicken or flip it one more time to coat.
5. Let the chicken rest for 5 minutes before slicing or serving.
Notes!
If your chicken is thick, cut it in half lengthways before cooking or pound it with a meat mallet until it is thinner.
